Broccoli-Spinach-Pasta
This broccoli-spinach pasta recipe is very fast to prepare and very easy to scale up! Feel free to experiment with other leafy vegetables and to play with the degree of spiciness! Thanks to my former flatmate for showing me this great recipe!

Ingredients
Sauce
- 1 broccoli
- 300-500 g spinach
- 1 small onion
- 2 garlic cloves
- olive oil
- 250 ml plant-based cream*
- salt
- pepper
- at least a tsp of curry
- some Cayenne pepper
- nutmeg
Pasta
- 400 g pasta of your choice
- salt water
Directions
- Fry the chopped onions in some olive oil. Towards the end of the frying time, add the garlic. Don’t add it too early, otherwise it might burn.
- In the meantime cut the broccoli into eatable pieces (even use the stem after pealing it) and add it to the pot. Also add the spinach and some water to cover the bottom if needed.
- Let it simmer until the broccoli softens and towards the end of the cooking time add the cream.
- Spice the mixture to your likening.
- Cook the pasta and serve together with the sauce.
Notes
- Instead of spinach, you can use chard (de: Mangold).
- *I usually use “Alpro Soya Cuisine” or “Alnatura Soja Cuisine”
